Full Description
A Local Market Tour in Chiang Mai
The full-day class starts at a busy local market, where your instructors show you how Thai cooks choose their ingredients. You see mounds of fresh lemongrass and galangal, kaffir limes with their knobbly skins, several kinds of basil, fresh and dried chillies, coconuts, noodles of every width and the sticky rice that is a daily staple in northern Thailand. Questions are welcome: this is the moment to learn what to buy, and what to substitute, when you cook these dishes abroad.
If you are looking for a cooking class with a market tour in Chiang Mai that feels local rather than staged, this is it: the market is a working market used by local families, not a show. The visit lasts around half an hour before the drive out to the farm. Note that the market is part of the morning and full-day classes, while the evening class goes straight to the farm.
The Organic Farm Among the Rice Fields
The heart of the day is a large organic farm on the edge of Chiang Mai, surrounded by rice paddies. Here you meet the farm's chickens, feed them, collect eggs still warm from the nests and, if you like, give a calm hen a gentle hug. Children love this part, and it is a rare chance to see where Thai ingredients really come from, far from the city traffic.
Rice in the Chiang Mai valley is usually planted with the arrival of the rains in June and July and harvested in October and November, so depending on the season you see bright green young rice, golden fields ready for cutting or open stubble. The farm walk is easy but unpaved, so comfortable shoes and a sun hat make it more enjoyable, especially in the hot months from March to May.
The Mushroom Hut and the Herb Beds
One of the farm's special features is its mushroom hut, a cool, humid shelter where oyster mushrooms and other varieties grow from rows of hanging bags. You learn how they are cultivated and pick mushrooms that go straight into your cooking. Around the hut, raised beds hold Thai herbs and vegetables such as holy basil, lemongrass, chillies, pandan and morning glory.
Your instructors crush leaves for you to smell and explain how each herb is used in the dishes you are about to cook. When vegetables are ready you may harvest some of them yourself, although what can be picked depends on the season. This hands-on time on the farm is what makes this organic farm cooking class in Chiang Mai different from a class held in a city kitchen.
The Open-Air Kitchen: Pad Thai, Tom Yum and Khao Soi
Back in the open-air kitchen, every guest has a personal cooking station, and you choose your menu at the start. The list covers the Thai favourites: Pad Thai, pad kra prao with holy basil, green, red and panang curry, tom yum, tom kha, som tam papaya salad and spring rolls. You also pound your own curry paste with a mortar and pestle, learning how much each chilli, root and spice adds.
The highlight is khao soi, the curry noodle soup that is the signature dish of Chiang Mai: egg noodles in a rich coconut curry broth, topped with crispy fried noodles, shallots, pickled mustard greens and lime. Instructors guide every step, so no experience is needed. Vegetarian and halal options are available, and gluten-free or allergy needs can be handled if you tell us before the class.
Fresh Coconut Milk and Mango Sticky Rice
Full-day guests get an extra lesson that few classes still teach: making coconut milk the traditional way. Sitting on a wooden grater stool, you shred the white flesh of a mature coconut, then squeeze it with water to press out fresh, fragrant milk, the base of curries, soups and desserts across Thailand. Tasting it next to tinned coconut milk shows the difference at once.
You then use that richness to make mango sticky rice by hand, steaming glutinous rice and dressing it with sweet, lightly salted coconut cream. Finally everyone sits down to share the feast, with a welcome drink of Thai milk tea, lemon tea or butterfly pea flower tea, a herbal drink in class and unlimited water. The day ends around 15:30 with the drive back to your hotel.
