Overview

This half-day Thai cooking class pairs a real local market with one of the most beautiful kitchens around Chiang Mai. After hotel pickup from the Old City area, your English- and Thai-speaking instructor walks you through Mae Hia Fresh Market to choose herbs, chillies and vegetables. Then you head to the Grand Canyon, a flooded former quarry with turquoise water and steep cliffs, where an open-air kitchen by the lake gives everyone their own cooking station. You prepare seven classic dishes, from pad thai and tom yum to a curry from your own pounded paste and mango sticky rice, and eat them by the water. On day sessions you can then swim or kayak. Morning, afternoon and evening sessions are available.

Highlights

  • Cook seven classic Thai dishes at your own station

  • Swim or kayak in the lake after class (morning and afternoon sessions)
  • Vegetarian, vegan and gluten-free versions on request

Full Description

Mae Hia Fresh Market

The class begins at Mae Hia Fresh Market, a working local market on the south-western side of Chiang Mai where residents shop for the day's cooking. There are no souvenir stalls here, just piles of lemongrass, galangal, kaffir lime leaves, holy basil, fresh chillies, green papaya, rice noodles and coconut, with vendors preparing curry pastes and snacks.

During about half an hour your instructor explains what each ingredient does and how Thai cooks balance spicy, sour, salty and sweet. It is a great introduction to northern Thai food culture, and a good chance to ask how to find these ingredients when you are back in your own kitchen. You will see the same herbs again at your cooking station, so the market walk makes every step of the class easier to follow.

The Grand Canyon lake in Chiang Mai

The Grand Canyon in Chiang Mai is a former quarry in the Hang Dong area, about half an hour from the city, that filled with water to form a striking lake of deep blue-green water ringed by tall reddish cliffs. It has become one of the most photographed spots around the city, and this class takes place in a lakeside kitchen with views over the water.

On the morning and afternoon sessions, lake access with kayaks and life jackets is included after you cook, so you can swim, paddle or simply sit with your feet in the water. Bring swimwear, a towel and a change of clothes. The evening session cooks with the lake as a backdrop but, for safety, there is no swimming after dark.

Seven Thai dishes from scratch

With step-by-step guidance at your own station, you cook seven favourites. Typically you choose between papaya salad or spring rolls, pad thai or cashew chicken, and tom yum or tom kha soup, then pound a fresh curry paste and cook a green, panang, massaman or northern khao soi curry. The menu finishes with Thai iced tea and the classic mango sticky rice.

The atmosphere is relaxed, with music, sizzling woks and plenty of laughter, and no previous cooking experience is needed. Tell us in advance about allergies or if you need vegetarian, vegan or gluten-free versions, so the instructor can prepare the right ingredients. Each station has its own wok and burner, so everyone cooks their own portion instead of watching a demonstration.

Khao soi and the flavours of northern Thailand

If you choose khao soi, you learn Chiang Mai's signature dish: egg noodles in a fragrant coconut curry broth, topped with crispy noodles, pickled mustard greens, shallots and lime. It reflects the city's location on old trade routes, and many visitors call it the best thing they ate in the north.

Whatever you cook, you sit down by the lake to enjoy your own creations, and takeaway boxes are provided for anything you cannot finish. You also receive an e-recipe book, so you can cook the same dishes again after your trip. Pad thai, by contrast, is the country's best-known stir-fried noodle dish, balancing tamarind, fish sauce and palm sugar with peanuts and lime.
