Full Description
Mercado Central de Valencia
The Mercado Central is one of the oldest working food markets in Europe and a masterpiece of Valencian Art Nouveau. Opened in 1928, it combines an iron frame, a soaring glass dome and walls decorated with ceramic tiles showing oranges and local produce, while a metal parrot weathervane turns on top of the roof. Inside, stalls overflow with tomatoes, flat green beans, saffron, short-grain rice, fresh fish and the oranges the region is famous for.
Your class begins here with the guide, who shows you how locals choose ingredients for paella and points out regional specialities. The Mercado Central opening hours are Monday to Saturday from early morning until mid-afternoon, which is why the market visit is part of the morning and midday classes but not the evening one. Arrive hungry: the colours and smells make it one of the best parts of the day.
Plaza del Mercado, Santos Juanes and the Silk Exchange
You meet in front of the church of Santos Juanes on Plaza del Mercado, under the palm trees that shade the square. The church has a richly carved baroque facade facing the market, and small shops once lined the arches at its base, a sign of how closely trade and daily life were tied together here. The square has been Valencia's commercial heart since the Middle Ages.
Across the street stands the Lonja de la Seda, the Silk Exchange, a late-Gothic merchants' hall built in the 15th century and listed by UNESCO as World Heritage. Its Hall of Columns, with twisted pillars rising like palm trunks, is one of the most beautiful Gothic interiors in Spain. Arriving a little early lets you admire both buildings from the outside before the class begins.
The paella kitchen and the class
In the paella kitchen, each cooking station is shared by one to three people, so everyone handles the pan, the heat and the timing. The chef demonstrates each stage and then guides you as you repeat it: browning the meat slowly in olive oil, adding the green beans and butter beans, grating tomato, adding paprika and saffron, pouring in water to make the broth and finally scattering the rice evenly across the wide, shallow pan.
You learn the details that make the difference, such as never stirring once the rice is in, judging the heat by sound and letting a thin layer of rice caramelise at the bottom into socarrat, the crunchy crust Valencians fight over. The atmosphere is relaxed and friendly, and nobody needs cooking experience to follow along and leave with a paella they are proud of.
Valencian paella: the dish and its story
Paella was born in the rice fields of L'Albufera, the lagoon just south of Valencia, where farm workers cooked rice over wood fires with whatever they had: rabbit, chicken, beans and snails. The name comes from the Valencian word for the pan itself. The classic paella valenciana still relies on chicken, rabbit, flat green beans, garrofó butter beans, saffron and short-grain rice, while seafood versions are a separate family of rice dishes.
In Valencia paella is a lunchtime dish, traditionally shared with family on Sundays, eaten straight from the pan. After cooking, you sit down to enjoy your creation together with local tapas and finish with a dessert. For anyone searching for the best paella class in Valencia, cooking it here, with ingredients from the market and a local chef, is the most authentic way to understand the dish.
