Goreme Open-Air Museum and the Goreme panorama

The Goreme Open-Air Museum is the best-known site in Cappadocia and part of the UNESCO-listed Goreme National Park. A cluster of rock-cut chapels and monastic cells, it was used by Byzantine monks, and the church walls still carry frescoes in faded reds and blues. With your own car there is no group clock. Uchisar Castle and Ortahisar Castle

Uchisar Castle is a huge rock pinnacle riddled with tunnels, rooms and windows, and it is the highest natural point in the region. Residents lived and stored food in it for centuries. The climb up the stairs is short but steep, and the view from the top covers Goreme, Pigeon Valley and, on a clear day, the far volcanic peaks, so it is a favourite for the best views in Cappadocia.

Ortahisar Castle is a similar rock fortress in the middle of the town of the same name, usually quieter than Uchisar. Both can fit into one private day, and your driver can drop you as close as the roads allow and wait. Wear shoes with a good grip, since the stone steps are worn, and ask the driver about the best time of day for the light.

Love Valley, Pasabag and Devrent Valley

Love Valley is known for tall, slender rock columns shaped by wind and water out of volcanic ash, and for the paths that wind between them. It is one of the most photographed places in Cappadocia and an easy short walk. Pasabag, also called Monks Valley, has fairy chimneys with several stone caps balanced on a single pillar, and small chapels cut into the rock where hermit monks once lived.

Devrent Valley, sometimes called Imagination Valley, has bare rock shapes that resemble camels and other animals, with no greenery to distract from them. If you are planning a Cappadocia valleys tour, these three can be done in one stretch, since each takes about thirty to forty-five minutes. Bring a hat and water, as shade is limited.

Zelve, Cavusin and Avanos pottery

Zelve Open-Air Museum was a living cave village until the 1950s, when rockfalls made it unsafe and residents moved out. You walk through abandoned homes, chapels and tunnels, with a quiet atmosphere that suits a slow private visit. Nearby Cavusin has a cliffside old village and a rock-cut church linked to Saint John the Baptist, one of the earliest in the region.

In Avanos, pottery made from the red clay of the Kizilirmak river is a trade older than many of the castles. You can stop at a workshop, watch a potter at the wheel and try a turn yourself if you wish. These are optional, so tell your driver which of them you want, and the day is planned around them.

Derinkuyu and Kaymakli Underground City

Cappadocia has dozens of underground cities, and Derinkuyu and Kaymakli are the two that visitors most often choose. Communities sheltered here in times of danger, living on several levels with kitchens, stables, chapels, storerooms and ventilation shafts. Derinkuyu goes deeper, while Kaymakli spreads out more widely, and the passages are narrow and low in places.

Most people visit one or the other in a day rather than both, so choose the one that fits the rest of your stops. Each is a drive of roughly half an hour or more from Goreme, which your driver will factor into the plan. Rose Valley, Red Valley, Pigeon Valley and the Three Beauties

As the afternoon turns golden, Rose Valley and Red Valley glow pink, orange and deep red. The sunset viewpoints are among the most requested stops of a Cappadocia day tour, so plan the rest of the day earlier and arrive in good time to find a spot. Bring a light jacket, as the air cools quickly after the sun drops.

Pigeon Valley, between Goreme and Uchisar, is named for the hundreds of dovecotes carved into its cliffs, where farmers once collected droppings as fertiliser. In Urgup, the Three Beauties are three fairy chimneys standing side by side, the subject of local legends. Both are quick stops that add variety between larger sites.
