Overview
This Balinese cooking class in Seminyak starts where every good Balinese meal begins: at the market. After hotel pickup in Seminyak, Legian or Kuta, your native Balinese chef takes the small group through a local morning market, stall by stall, to choose fresh herbs, spices, fish, meat, vegetables and fruit, explaining what each dish needs and which ingredients you can find in Asian grocery stores abroad. Back at the cooking school you prepare authentic Balinese and popular Indonesian dishes with your own hands, learning the techniques and spice pastes behind them, then sit down together to enjoy the meal you made. Full Description
The local morning market
Balinese markets are busiest at dawn, when farmers and traders bring in fresh produce, flowers for daily offerings, fish from the coast and baskets of spices. Your class begins with a guided walk through a local market near the cooking school, where your chef leads you from stall to stall and shows how to pick the best ingredients.
You will see and smell turmeric, galangal, ginger, lemongrass, shallots, chillies, candlenuts, kaffir lime leaves and banana leaves, alongside tropical fruit such as snake fruit, mangosteen and rambutan when in season. The chef explains which of them can be found abroad in Asian grocery stores, so you can cook these dishes again after your trip. The ingredients bought here are the ones you use in class.
The flavours of Balinese cuisine
Balinese food is built on spice pastes ground by hand in a stone mortar. The most important is base genep, a blend of shallots, garlic, galangal, turmeric, ginger, chillies, candlenuts and other aromatics that gives many Balinese dishes their deep colour and flavour. Sambals, fresh or cooked chilli relishes, are served with almost every meal.
During the class, your chef shares the culture behind the food: how dishes are prepared for ceremonies, how families cook together and how Indonesian dishes from other islands became everyday favourites in Bali. If you are looking for a Bali cooking class that explains the why as well as the how, this is it. Let us know about allergies or dietary needs when booking.
The cooking class and shared meal
Back at the cooking school, each participant has a place at the stations, and the chef demonstrates each step before you try it yourself: grinding spice pastes, preparing vegetables and cooking each dish. Because the group is small, you will not be waiting for help, and there is time to ask questions and learn handy techniques from the chef and fellow cooks.
When the dishes are ready, everyone sits down together to enjoy the meal, with morning tea served during the class. At the end you receive a recipe book to recreate the dishes for friends and family, and a certificate of completion. The whole experience lasts about four hours from pickup, and most guests leave with a new favourite dish.
Seminyak, a food lover's district
Seminyak, on Bali's west coast north of Kuta and Legian, is one of the island's liveliest areas for food, with everything from simple local warungs selling nasi campur to modern restaurants. A morning cooking class here is the perfect way to understand the local dishes you will see on menus around the island.
Hotel pickup is included from Seminyak, Legian and Kuta at about 08:00, and the class ends around midday. Drop-off is not included, so many guests continue to the beach or the shops of Seminyak after lunch. Things to do in Seminyak rarely get more hands-on, or more delicious, than this, and the recipes travel with you long after the trip.
