Full Description

Tsukiji Outer Market: Tokyo's seafood quarter

For decades Tsukiji hosted the world's most famous fish market. In 2018 the wholesale inner market and its tuna auctions moved to Toyosu, but the outer market stayed, and it remains one of the most lively food streets in Tokyo: narrow lanes packed with fishmongers, knife shops, dried-seafood merchants, rolled-omelette stalls and small sushi counters.

The classroom is set in a traditional building in the centre of this quarter, so a Tsukiji sushi class here lets you explore before or after. Come early, as many stalls open at dawn and start closing by early afternoon, and some shops close on Sundays, national holidays and certain Wednesdays. The market is a short walk from Ginza and from Tsukiji and Tsukijishijo stations.

The fish-cutting show and Japanese knives

The class begins with a moment few visitors ever see up close: the sushi master breaks down a whole fish in front of you, showing each step of preparing fish for sushi, from scaling and filleting to slicing clean portions. As he works, he explains the long single-bevel Japanese knives used for fish and why their sharpness matters so much for texture.

This show turns the class into much more than cooking. You understand why freshness and knife work are at the heart of sushi, and why chefs train for years before serving customers. The English-speaking host interprets everything and adds stories and slides about sushi culture, so you can ask as many questions as you like.

Making nigiri and maki with a pro chef

Then it is your turn. Using authentic tableware and utensils supplied by local Tsukiji shops, you learn what sushi really is and the proper steps for shaping nigiri: taking the right amount of rice, pressing it gently and laying the topping so it sits perfectly. You make five different nigiri, each with a different topping, plus one maki roll.

The sushi master corrects your technique piece by piece, which is the real value of learning sushi making in Tokyo from a professional rather than a video. Each guest also receives a sushi hat to wear, which makes for great photos. Vegetarians and gluten-free guests are welcome; please tell us about any allergies when you book.

Fresh wasabi, sushi rice and dashi soup

While you enjoy your own sushi, the master shows his speed and skill by preparing an extra piece for each guest. You watch him grate fresh wasabi root, which has a sweeter, softer heat than the paste most people know, and perform shari-kiri, the cutting and mixing of seasoned vinegar into warm rice that gives sushi rice its gloss.

Traditional dashi soup, the light broth at the base of so much Japanese cooking, is served alongside as the perfect pairing. By the end you have eaten a full sushi meal, learned the difference between good and great sushi, and gained a skill you can share with friends and family after your trip.

Option: guided walk through the Tsukiji Outer Market

If you choose the Guided Tour and Sushi Making Class option, your morning starts with a walk through the outer market before the class. Following the fish from the ocean to your plate, the guide leads you along the busiest lanes, explains what the stalls sell and how the market works, and helps you try local street snacks such as rolled omelette.

This option lasts about 3.5 hours and starts at 08:30 or 11:00, so it is ideal if this is your first visit to Tsukiji and you want context rather than wandering alone. Food you buy at the stalls is extra. The class-only option starts at 10:30 or 13:00, and both end with the same full sushi meal.
